Amuse Bouche,
Cooked and raw salmon
with soft white carrot puree.
Cod fish marinated in rhubarb
with tomato, capers, spring onions, potato salad
served with basil mayonnaise, and orange foam vinaigrette.
Crab tortello cooked at low temperature
with ricotta cream, tomato and sage oil.
Lime sorbet with basil.
Main Course:
Roasted Spanish suckling pig (rolled and boneless)
with rosemary-apple sauce
capsicum mousse, baked potatoes, and mojo picon sauce.
